tima Pavlidis was founded in 1998 by Christoforos Pavlidis, a marble businessman. An unexploited area of about 20 hectares, on the west side of the city, was the one that had caught his attention. It is a narrow valley surrounded amphitheatrically by three big mountains (Falakro, Menikio, and Pangeo); in the middle of them, the Aegean Sea.

This geographical modification provides the vineyards with a special microclimate, with cool winds during the night that prolong the ripening period and give the opportunity to reach the optimum maturity level slowly. And there is where it all started with the first 2 hectares of the vineyard of Kokkinogia.

WINES

The varieties cultivated are:

The Greek Assyrtiko, Agiorgitiko and the international Sauvignon Blanc, Chardonnay, Tempranillo and Syrah. At the same time, an experimental vineyard is maintained exclusively with Greek varieties. Pavlidis Estate has to present a proposal of white wine from the pairing of Assyrtiko with Sauvignon blanc, the red result of the coexistence of Agiorgitiko with Syrah and the rosé produced from grapes of the Spanish Tempranillo variety. Finally, there are the premium single-varietal wines Assyrtiko, Chardonnay, Agiorgitiko, Tempranillo and Syrah.

VINEYARD

The privately owned vineyards of the estate are situated in two different sites, Kokkinogia and Perichora, areas known for their unique terroir since ancient times. The climate is typically Mediterranean continental with low summer night temperatures and afternoon mountain breezes providing ideal conditions to maximize the aroma and phenolic potential of the grapes while limiting disease development. In the context of the effort to highlight all those characteristics of the varieties associated with the microclimate of our region, particularly low yields per hectare are maintained and all cultivation care takes place manually.

CLIMATE

The climate is characterized as classic dry-thermal with a strong temperature difference between day and night, during the summer period, which favors the maximum preservation of the aromatic and phenolic potential of the grapes as well as a characteristic acidity. In addition, there is a permanent afternoon cold current from the Nevrokopi area, which finds a passage between the mountain ranges that embrace the vineyard, which removes humidity and diseases during the ripening and harvest period.
